Garlic Mashed Potatoes w/Dairy Free Alternative

Ingredients
- (3 - 5 pounds) Potatoes - Prefer Red or Yukon Gold
- (1 bulb, pealed) Organic Garlic
- (1/2 teaspoon) Redmond Sea Salt
- (1/4 teaspoon) Organic Black Pepper
- (1 stick) Butter or Dairy Free Alternative
- (1/2 cup or more as needed) Milk or Dairy Free Milk Alternative like Oat Milk
Directions
Wash approximately 3 -5 lbs of potatoes. We like leftovers, so adjust your number of potatoes accordingly to ensure the desired number of servings and leftover preferences. My family prefers red or golden potatoes when it comes to making mashed potatoes.
Peal as much of the skin as desired, or don't peal any at all.
Cut potato into pieces. The smaller they are the faster they will cook.
Place potatoes and pealed garlic cloves in a pot.
Add salt and pepper.
Cover completely with water. Reserve 4-6 cloves of garlic to dice and put in after cooking if you like an extra punch of flavor.
Bring to a boil.
Reduce heat to medium and continue cooking for 15 - 20 min or until potatoes are tender when pierced with a fork.
Drain off the water.
Add 1 stick butter. (For dairy free option use dairy free spread).
Mash the potatoes, cooked garlic, and butter either by hand or on medium speed with a hand mixer.
Add 1/4 - 1/2 cup of milk (For dairy free option we use Oat Milk and they are still creamy and delicious).
Mix well.
Add more milk if necessary until you reach the desired consistency.
If you reserved 4-6 cloves of garlic for that added garlic punch, mince and add to the mashed potatoes before serving.
Add any additional salt, pepper or small pats of butter to taste.
