Roasted Garlic without using foil
Give your dishes a creamy, buttery, nutty and sweet taste by adding roasted garlic. Prep time is involved in roasting up some garlic bulbs, but the effort is so worth the depth your dish will have with the roasted garlic. Preserve your roasted garlic submerged in olive oil in a sealed jar in the refrigerator for up to two weeks.

Ingredients

  • (12 bulbs) Organic Garlic
  • (12 Tablespoons) Organic Olive Oil

Directions

Preheat oven to 400 degrees F


Cut 1/2 inch off top of each head of garlic. Discard the loose papery skin. Make sure the top of each clove of garlic is exposed.


Place one head of garlic in each section of a muffin pan. (I prefer to use silicon muffin pans rather than tin pans).


Drizzle olive oil over each head of garlic and rub it in making sure the garlic is well coated.


Place a second muffin pan inverted on top.


Bake in oven for 40 - 45 minutes.


Roasted garlic is done when the tops are nicely caramelized and the tip of a knife is easily inserted into an inner clove.


Once cooled, squeeze each garlic clove from its skin.
