Spaghetti w/ Ground Lamb and Spinach

Family Spaghetti night would never be the same again. Take your family to something 'new' with something 'old'. Grab some ground lamb meat, add to your favorite spaghetti sauce and Bon Appétit!
Don't have a sauce made or jarred? Not a problem, we were inspired by Food and Wine's recipe below. Spaghetti loved by many, but don't forget to try with a different pasta sometimes as well. Penne Rigate, Casarecce, Elbows, Linguini, Angel Hair, Bucatini are few different options if you are fresh out of Spaghetti noodles.

Ingredients
- (2 Tbl) Extra-Virgin Olive Oil
- (1 Small) Onion - Chopped
- (3 LARGE) Garlic Cloves (Finely Chopped)
- (1 1/2lbs) Lamb (Ground) 1#
- (1/3 Cup (6oz can)) Tomato Paste
- (3/4 Cup) Dry Red Wine
- (1/2 tsp) Dried Oregano
- (To Taste) Salt
- (To Taste) Freshly Ground Pepper
- (1 1/4lbs) Baby Spinach
- (3 Tbl) Mint (Finely Chopped)
- (1 Lb) Spaghetti Noodles
- (1/3 Cup) Pecorino Romano Cheese - Freshly Grated (For Sprinkling)
Directions
- In a large casserole, heat the olive oil over moderately high heat. Add the onion and garlic and cook, stirring, until translucent, about 5 minutes. Add the lamb and cook, stirring, until the meat is lightly browned, about 10 minutes. Stir in the tomato paste, wine and oregano; season with salt and pepper. Cover and simmer over low heat for 10 minutes. Add the spinach and mint and cook, covered, for 10 minutes longer.
