Spicy Meatballs
Turn up the heat on your regular meatballs by adding some spice! These meatballs, made with Grass Finished Beef Spicy Sausage and Grass Finished Ground Beef, will give that quick weekday meal an extra kick to launch you into the week. Want another variation, try swapping out the Grass Finished Ground Beef with some Pasture Raised Ground Lamb. Yummy! Serve with a side dish of white or brown rice and a nice green salad. - I get requested by friends to make these meatballs when they come to visit!

Ingredients

  • (1 lb) Grass Finished Ground Beef
  • (1 lb) Grass Finished Beef Spicy Breakfast Sausage
  • (2) Free Range Farm Fresh Eggs
  • (1/3 cup) Organic Milk (Preferably Raw)
  • (1 small) Organic White or Yellow Onion finely diced
  • (1 tsp.) Organic Garlic Powder
  • (1 tsp.) Organic Onion Powder
  • (1 tsp.) Sea Salt - Finely Ground
  • (1 tsp.) Organic Black Pepper
  • (1/2 cup) Organic Quick Cooking Oatmeal or Breadcrumbs (optional)
  • (1 cup) Organic Ketchup
  • (1 15 oz can) Organic Tomato Sauce
  • (3 T.) Organic Yellow Mustard
  • (1 cup) Organic Brown Sugar
  • (1/2 to 2/3 cup - start with 1/2 and add more to taste) Worcestershire Sauce
  • (3/4 cup) Water

Pre-heat Oven to 400 F

Meatball Mixture

In a large mixing bowl, combine the Free Range Farm Fresh Eggs and beat well. Add to the eggs the Organic Milk, Organic White or Yellow Onion finely diced, Organic Garlic Powder, Organic Onion Powder, Sea Salt, Black Pepper, and Organic Quick Cooking Oatmeal or Breadcrumbs (if desired). Mix well. Next add the Grass Finished Ground Beef, Grass Finished Beef Spicy Sausage and mix until thoroughly combined. Coat a shallow baking pan with butter or other non stick cooking spray. Shape meat mixture into 1 1/4-inch meatballs and place in a single layer in baking dish.

Bake for 12 minutes or until browned. In the meantime prepare the spicy sauce.

Spicy Sauce Mixture

While Meatballs are cooking in the oven, combine Organic Ketchup, Organic Tomato Sauce, Organic Yellow Mustard, Organic Brown Sugar, Worcestershire Sauce, and Water in a 4-quart saucepan. Mix and bring to boil. Reduce heat and simmer on low for 15 min. Add additional spices of garlic powder, onion powder, salt and pepper to taste if desired.

Pour the sauce over the cooked meatballs. Return to oven and continue cooking for 15 - 20 min or until hot a bubbly throughout. Serve over rice if desired.
